New York is world famous for its monuments such as the Statue of Liberty, its sports teams like the New York Yankees and its food such as its pizza, hot dogs and…. New York Strip steaks! In 1827, the famous Delmonico’s restaurant opened in Manhattan. Delmonico’s proclaimed itself to be America’s first fine dining restaurant and you might have guessed what their signature dish was — a cut from the short loin called the Delmonico steak.
Due to its association with the city and Delmonico’s, the cut later became known as the New York Strip. Although, not all New York strip steaks are actually in New York. In fact, one of the best New York strips you’ll ever devour can be found on the complete opposite side of the country at the famously delicious Lady Jaye West Seattle butcher shop. How does Lady Jaye rustle up such a delectable New York strip? It’s time to reveal some tricks and tips for this mouthwatering cut of meat.
Not only does a New York Strip satisfy a hankering for a person looking to have a mouthwatering steak, it is actually very simple to prepare and cook, especially by following these simple tips. From the grill to your stomach, these simple instructions will allow you to prepare, cook and scarf down a meal that is known around the world. Let’s get started!
First thing’s first, you need to make sure you take out the strip from the freezer and let it sit about 20-30 minutes before tossing them onto the grill.
For the most tender steak, try dry brining your steak after it is completely thawed. Pat each side of the steak and season liberally with salt and pepper.
Place the steaks on a baking sheet and let it sit in the refrigerator for at least one hour, or up to two days. This process will season and dry out the surface of the steak, resulting in a beautifully tender New York Strip with a delicious crust.
Remove the steaks from the refrigerator and set the grill to medium-high heat while your steaks rest at room temperature. Make sure to oil the grill grates or both sides of the steaks to prevent sticking as you grill your New York Strips.
Now, simply drop the steaks onto the grill and cook for 4-5 minutes on each side. This should allow the steaks to turn a brilliant golden brown.
After this color is achieved, cook for another 3-5 minutes. It is important to not base the cooking on color alone, the internal temperature should be anywhere between 125-145 degrees Fahrenheit (125 for rare and 150 for well done) (We prefer a nice 133 degrees.)
At this stage, it’s crucial to take the steaks off the grill and let them rest for five to ten minutes.
Although it’s tempting to cut into the steaks immediately, allowing them to rest ensures that your New York Strip will be juicy and tender.
